If your anything like me when you get home from your run, or work, or school you want to eat some food and you generally want it to be healthy, but it is just so hard because cooking food takes so much time. Well that leaves you with a couple options either open that bag of chips, or go to a fast food restaurant, but if you have a few good recipes that you know how to make that are fast; then you could have finished cooking the meal in the time it takes you to go eat out, an it is typically healthier this way too. One meal that is both delicious and quick is asian lettuce wraps. Who would have thought that they could be so easy?
Here is my version of the recipe for the desperate foodie runner.
Ingredients:
1 lb ground turkey burger
1/2 teaspoon ginger
2 teaspoons garlic
2 teaspoons minced onion
Hoisin sauce to taste
iceberg lettuce
1 teaspoon pepper
1 teaspoons soy sauce
1 can water chestnuts chopped
Directions:
- cook the ground turkey burger (usually about 5-7 minutes)
- mix in minced onion, garlic, ginger, pepper, soy sauce and water chestnuts. continue cooking another 2-3 minutes.
- remove from heat put desired amount of meat in lettuce add hoisin sauce to taste.
So this is a simple delicious recipe that takes no more than 10 minutes. I will be posting at least one quick meal a month so if you have any ideas for quick meals share in the comments and I may include your recipe in the next Meals on the run.
